Storage and Preparation 

LOBSTER MEAT  

STORE: All of the meat is fresh and should have at least 3 days of shelf life as long as properly refrigerated. 

  • If the product is not going to be consumed within 3 days it should be frozen as soon as it is received.  
  • If the product is frozen, it should be defrosted in the refrigerator 24 hours prior to consumption.

PREPARE: Serve chilled or include in any recipe featuring lobster or lobster meat. 

 

LOBSTER TAILS 

STORE: Keep frozen. Thaw in refrigerator 24 hours prior to preparation. 

PREPARE: Lobster tails can be boiled, steamed, baked or broiled. 

   BOILED / STEAMED: 4-5 ounce: 3-5 minutes        6-7 ounce: 5-7 minutes

   BROILED: 

  • Place lobster tails on a baking sheet. 
  • Use kitchen shears or a sharp knife to carefully cut top side of lobster shells lengthwise. Pull apart shells slightly.
  • Season the meat with butter, salt, pepper and paprika to taste. 
  • Broil (5 to 10 minutes) until lightly brown and the lobster meat is opaque. 

 

LOBSTER BISQUE

STORE: Keep frozen. If possible, thaw in refrigerator immediately before use.

PREPARE: 

  • Place bag in hot water (190 degrees) for 8-10 minutes. DO NOT BOIL.
  • Carefully remove bag from water. 
  • Cut open with scissors. Serve. 

 

BEST CLAM CHOWDA

STORE: Keep frozen. If possible, thaw in refrigerator immediately before use.

PREPARE: 

  • Place bag in hot water (190 degrees)  for 8-10 minutes. DO NOT BOIL.
  • Carefully remove bag from water. 
  • Cut open with scissors. Serve.

 

LOBSTER MAC and CHEESE  

1 POUND CONTAINER:

STORE: Keep frozen. If possible, thaw in refrigerator for up to 24 hours.

PREPARE (if thawed): 

  • Carefully remove shrink wrap. Place container on baking sheet.
  • Preheat oven to 350 degrees. Cook for approximately 30 minutes until product is simmering and hot throughout. Internal temperature should reach 165 degrees.
  • Remove from oven. Let stand for two minutes. 

PREPARE (if frozen): 

  • Follow above directions but cook for 45 minutes or until internal temperature reaches 165 degrees.
  • Remove from oven. Let stand for one minute. 

26 OUNCE CONTAINER: 

STORE: Keep frozen. If possible, thaw in refrigerator for up to 24 hours.

PREPARE (if thawed): 

  • Carefully remove shrink wrap. Place container on baking sheet.
  • Preheat oven to 350 degrees. Cook for approximately 30-35 minutes until product is simmering and hot throughout. Internal temperature should reach 165 degrees.
  • Remove from oven. Let stand for two minutes. 

PREPARE (if frozen): 

  • Follow above directions but cook for 45 minutes until product is simmering and hot throughout. Internal temperature should reach 165 degrees. Remove from oven. Let stand for one minute.  

40 OUNCE CONTAINER: 

STORE: Keep frozen. If possible, thaw in refrigerator for up to 24 hours.

PREPARE (if thawed): 

  • Carefully remove shrink wrap. Place container on baking sheet.
  • Preheat oven to 375 degrees. Cook for approximately 40-45 minutes until product is simmering and hot throughout. Internal temperature should reach 165 degrees.
  • Remove from oven. Let stand for two minutes. 

PREPARE (if frozen): 

  • Follow above directions but cook for 55-65 minutes until product is simmering and hot throughout. Internal temperature should reach 165 degrees. Remove from oven. Let stand for one minute. 

  

LOBSTER MAC AND CHEESE ON HALF SHELL 

STORE: Keep frozen. 

PREPARE: 

  • Carefully remove shrink wrap. Place shells on baking sheet.
  • Preheat oven to 375 degrees. Cook for 40 minutes or until bubbly. 

Internal temperature should reach 165 degrees. 

  • Remove from oven. Let stand for one minute. 

 

LOBSTER RISOTTO ON HALF SHELL 

STORE: Keep frozen. 

PREPARE: 

  • Carefully remove shrink wrap. Place shells on baking sheet.
  • Preheat oven to 375 degrees. Cook for 40 minutes or until bubbly. 
  • Internal temperature should reach 165 degrees. 
  • Remove from oven. Let stand for one minute. 

  

 LOBSTER MINI GRILLED CHEESE APPS

STORE: Keep frozen. If possible, thaw in refrigerator for up to 24 hours.

PREPARE: 

  • Remove from packaging.
  • Apply Kate’s Maine Butter to both sides of mini-sandwiches. 
  • Grill each side for 90-120 seconds until golden brown.
  • Internal temperature should reach 165 degrees. Serve immediately.

 

LOBSTER POT PIE 

STORE: Keep frozen. If possible, thaw in refrigerator for up to 24 hours.

PREPARE: 

  • Carefully remove shrink wrap. Place ramekins on baking sheet.
  • Preheat oven to 425 degrees. Cook for 18 minutes.
  • Reduce heat to 350 degrees. Cook for 5 to 8 minutes until internal temperature reaches 165 degrees.
  • Remove from oven. Let stand for one minute.
